Recipe: oven baked Bacon wrapped stuff chicken with rice

Have decided to also post up some of my chicken experiments, since every good geek needs to stay well feed.

Ingredients (as I used them):
4 thigh pieces (with bone still in) you can use any other cut really.
2 cups of rice
bacon rashers, enough for each piece of chicken
green tomato relish (any other can be used)
shredded cheese (mine was a Melting Mix)
3 cups of chicken stock
1 whole lemon
assorted herbs & spices.

Method:
Pre-heat oven to 180 C (I set mine to 160 due to it being a prick).
Wash rice & set aside to dry.
Cut the bone from the chicken and trim the fat, set aside the bones for later use.
flatten each piece of chicken & put in your stuffing. Roll tightly & then wrap in bacon rashes, secure with toothpicks or skews.
Pan toast the rice until a little crispy. Put into casserole dish or roasting pan with lemon wedges. Lightly fry chicken bones & add to rice (done for flavouring). Add the stock to the rice
Pan sear bacon wrapped chicken for a few minutes & add to the rice stock. Cover with tinfoil & put into oven for an hour.
Check to see if rice has cooked through & not burnt to dish.
Remove from oven & leave covered for 10 minutes so rice can steam & meat relax.
Before serving, remove bones & squish lemons so juice runs out. Mix in any cheese that dripped out of the chicken.
Serve & enjoy.

      if you do your shopping well, it’s a pretty inexpensive thing to make. With chicken thigh pieces with the bone still in being amazingly cheap to buy from the supermarket.
      you can also swap the stock for tomato juice (again, 3 cups) and add a bay leaf.
